For the crust:

1 ½ cups crushed digestive biscuits or graham crackers

6 tablespoons unsalted butter (cubed)

½ cup heavy cream

1 teaspoon sea salt (adjust to taste)
For the chocolate ganache:

200g (about 7 oz) dark or semi-sweet chocolate (chopped)

1 cup heavy cream

Sea salt flakes for garnish
Preparation:

Prepare the crust:
Mix crushed biscuits with melted butter and sugar. Press the mixture into the base and sides of a tart pan. Chill for 15 minutes, then bake at 350°F (175°C) for 8–10 minutes. Let it cool. -
Make the salted caramel:
In a heavy saucepan, melt the sugar over medium heat, stirring continuously until it becomes an amber liquid. Add butter and stir until melted. Slowly add cream (be careful of splashes), then stir in salt. Let it cool slightly and pour over the crust. Chill for 30 minutes. -
Make the chocolate ganache:
Heat the cream in a saucepan until just boiling, then pour it over the chopped chocolate in a bowl. Let it sit for 1–2 minutes, then stir until smooth and glossy. -
Assemble the tart:
Pour the ganache over the caramel layer. Smooth the top and chill the tart for at least 2 hours, or until fully set. -
Garnish and serve:
